Camping Recipe: Campfire Nachos

  • 1 TBSP olive oil
  • ½ lb tortilla chips
  • 1 can El Pato hot tomato sauce, 7.75 oz
  • 1 cup shredded Mexican cheese blend
  • 1 can black beans, 14.5 oz
  • 1 large avocado, cubed
  • 4-5 green onions, sliced
  • handful of fresh cilantro, chopped
  • 1 small lime, cut into wedges

Instructions:

  1. Start by building a strong fire and adding coals to the fire. You will need about 15 to 18 calls for the lid and around eight coals for the base.
  2. Lightly oil the bottom of your Dutch oven and then add a layer of chips.
  3. Scoop in a fourth of the can of spicy tomato sauce, a fourth of the drained black beans, 1/4 cup of cheese, and a handful of the cubed avocado. Sprinkle and green onions and cilantro, and then repeat the layers two more times.
  4. Cover the Dutch oven and place on the coals to cook add coals to the top to help cook all the way through, and heat for around 10 minutes until the cheese is melted.
  5. Serve with fresh lime wedges.
