Camping Recipe: Cast Iron Blackberry Glazed Chicken

Ingredients

Recipe adapted from one on CountryLiving.com

  • 6 ounces of blackberries
  • 1/4 cup of water
  • 2 tbsp. of white wine vinegar
  • 1 tbsp. of sugar
  • 2 tbsp. of cold butter
  • 1 tbsp. of whole-grain mustard
  • 4 chicken thighs
  • 4 drumsticks
  • Kosher salt
  • Black pepper
  • Fresh parsley

Instructions:

  1. Preheat your grill to medium heat. 
  2. Combine the blackberries, water, white wine vinegar, and sugar in a saucepan.
  3. Bring to a simmer, mashing occasionally, until liquid for 18 to 20 minutes.
  4. Stir in the butter and whole-grain mustard until combined.
  5. Transfer half the glaze to a bowl to reserve.
  6. Pat chicken thighs and drumsticks dry.
  7. Season the chicken with kosher salt and black pepper.
  8. Grill the chicken, skin-sides up, and cover for 15 minutes. 
  9. Uncover and baste with some of the glaze.
  10. Grill the chicken, turning and basting occasionally, until cooked through or for 10 to 12 minutes. 
  11. Sprinkle with fresh parsley and serve with the rest of the glaze.
