Camping Recipe: Easy Backpacking Jambalaya

If you love backpacking as much as RVing, you’ll love this easy camping recipe that is perfect for enjoying at the campground or on the trail. Ingredients

  • 1 c. orzo pasta
  • ½ c. dehydrated/freeze-dried vegetables of choice
  • 2 tbsp. tomato powder
  • 1 tbsp. Cajun/Creole spice, more or less, depending on your desired spice level.
  • 1 tsp. salt
  • 1 tbsp. olive oil
  • 3 oz. summer sausage or jerky
  • 2 ½ c. water

Instructions

Make ahead:

  1. In a zip-top bag, combine orzo, veggies, tomato powder, Cajun spice, and salt until thoroughly mixed.
  2. Bring the olive oil and sausage/jerky for preparation at the campsite.

Directions:

  1. Bring a pot of water to a low boil with the mix and olive oil.
  2. Cook for 10 minutes until the orzo is cooked through, be sure to stir frequently to prevent burning.
  3. While the mix cooks, cut the meat into bite-sized pieces and add to the pot to heat through.
  4. Remove and serve with sour cream or cornbread.
